It sounds nasty, but I promise it isn’t
A few weekends ago our great friend Barbara graciously took our family pictures. We had so much fun at the Japanese Tea Gardens (the renovations completed earlier this year were amazing!) and I even got a chance to try my shooting skills on Barbara, her husband Justin and their dog Cinko — this ‘chance’ reminded me of how much I will have to learn once I buy my new camera — but I’m up for the challenge!
After the Tea Gardens and lunch at historic Joseph’s Bakery we headed to Ford Family Farm to fulfill my dreams of being photographed in a pumpkin patch (seriously, I love the bright vibrant orange and all the connotations (and tastes) that come from pumpkins!). When we arrived, we weren’t allowed in without paying and a few of my counterparts warned that the Farm may be a sham, but I insisted that there would be plenty of picture opportunities inside (the lady at the gate convinced me of this) and forced everyone to pay the $6 entry. As we walked in, we were instantly surrounded by young children…no one over the age of 5. I assured myself that the pumpkin patch would prove itself to the group but as we approached it I started to see through all the lies my mind had been concocting. In reality, the pumpkin patch wasn’t a patch at all, it was merely a covered piece of dirt land with a few pumpkins strewn about. The ‘picture opportunity’ the gatekeeper had promised me was a mere bale of hay…I was fuming…and the boys (Dustin & Justin) started in on me, making fun of my gullibility and the ‘pumpkin patch’ that wasn’t. I’ll admit, I was pretty upset – mainly at myself, but also at the fact that no one saw the potential that a true pumpkin patch could have for pictures! Luckily, Barbara also saw the imaginable and went with it as I started dragging and slinging pumpkins over to the hay. Dustin caught on and helped me haul pumpkins too and once we were done setting up our scene, there was actually a line of people wanting to take their picture in it! Seriously. I was officially happy – happy that I had taken a potentially depressing situation and turned it into a good thing…and happy that I was gonna get my picture taken in a pumpkin patch (albeit a man-made pumpkin patch about 6 feet in circumference). Here are a few of my favorites!
So, we went about our photo shoot – on the hay, in the hay, around the hay…it was a blast! On one picture Barbara was putting her creative genius to work and asked us to ‘bump our pumpkins’ to which we both busted out laughing…but really, she needed us to bump our pumpkins for the camera!
It was a great day spent with magnificent friends exploring our great city. Barbara – thanks again for the photo op and for your friendship…I love our Wednesday lunches and our explorations (especially when we get to drag the husbands along!).

Coupon-Cutters Unite!

This is “my” story minus the military affiliation. My coupon-cutting friends will sympathize with the author (why must cashiers hate the thrifty??) and the rest of you just won’t get it, but either way it’s a well-written, truth-telling story. Keep honing your skills, my friends, and know that adding that “tiny column where you can indicate if you have a coupon for the item” really does help in your scavenger hunts (yes, I do it!). Enjoy…

My Commissary Clerk Hates Me…
My local commissary clerks hate me. I see it in their faces. Every shopping day I prepare myself for the disdain of not only my unfortunate clerk but the wrath of those patrons in line behind me. Why? Because I’m ‘that lady’…the one with a stack of coupons, the one that holds up the line. I confess…I am the ‘coupon queen.’
I was not always this way. In fact, I used to think coupon clippers were uptight, penny-pinchers. I scoffed at their little ‘coupon wallets’ and mini calculators. I reached right across them and grabbed my items without regard for cost or coupon. I was free; free of paper-cuts, worry, and penny pinching. What was a quarter here and fifty cents there? Huh! I laugh at the face of such pettiness.
I was converted slowly, much like an alcoholic. It started with those coupons hanging beneath the items on the grocery shelf. You know the ones I am referring to. I was purchasing McCormick’s Herb and Garlic marinade anyway…what the heck, I’ll take that $0.25 off coupon. Then I saw the ‘military only’ coupon. Wow, I’m part of an exclusive group of savers…”Military Only coupon.”
My addiction was deepened when my commissary installed those coupon dispensers with the flashing red lights. I had to stop and take note of the savings. I had to grab that coupon, afterall, I was buying that item anyway!
But the clincher was the commissary receipt. At the bottom of the receipt something caught my eye…Total number of coupons, Total saved from coupons, total % of savings. I saved $24! Thirteen percent of my food bill! TWENTY-FOUR DOLLARS and all I did was grab a few coupons laying there.
Do you know what I can do with that $24? Can you say Pedicure? Hmmmm…I wonder…could I increase the savings next time to get, say, a manicure and pedicure? A Massage? Or more?
The Receipt that started it all….
I was hooked. I was on a mission to fund my ’splurges’ with guilt free savings. I made mistakes along the way. I clipped every coupon and purchased items I didn’t use, or didn’t like…or worse yet – I let that coupon influence my purchase on a product that actually cost MORE than an item without a coupon.
My skills developed, I became a shrewd coupon clipper. I scouted the resources like the best deer hunter; in the Sunday paper, the commissary, and WOW, online! I honed my skills to clip only those for products I actually use and provide real savings. Yes to this coupon. No to that one. Forget that lame ‘coupon wallet’ I require a ‘coupon box’…an index card box, complete with index guides, to organize my coupons. My standards are high: coupons must be for quality products that provide real savings.
I adapted my shopping skills as well. I menu plan to maximize my accumulated coupons. I developed a shopping list that follows the layout of my local commissary and added a tiny column where I could indicate I have a coupon for that item. I am a skilled and relentless coupon saver.
This has created an adversarial position with many clerks. They look at my stack and I can see it on their face, “I will find those expired coupons, I will disqualify anything that does not perfectly fit the requirements of that coupon.” And the battle begins. Have I scrubbed my stack, are there expired coupons? Did I buy the required number for the full savings? Who will win?
I am not happy unless I save at least 15% of my total bill. My record is29%! My highest savings for one shopping trip is $71.89. Last year I saved $1,318.25 through coupon clipping. I am not resting on my laurels…I will beat that record this year. I will endure the stares, the heavy sighs, the glances of disdain. I WILL fund my trip to Hawaii with coupon savings…

Exploding Enchiladas

This recipe is great to feed a large group and always tastes good as leftovers (again, good for a long weekend trip/getaway because it can be microwaved and still tastes great).
- 2 lbs hamburger
- 1 can chopped olives
- 16 ounce jar Thick & Chunky Salsa
- 1 can cream of mushroom soup
- 1 chopped onion (little less if onions aren’t your favorite, I usually do 1/2 or 1 very small onion)
- 1 can red enchilada sauce
- 15 ounce can tomato sauce
- 16 ounce shredded Colby/Jack cheese
- at least 18 corn tortillas
Preheat oven to 350 degrees. Brown beef with onion, drain. Add olives, sauces, salsa, and soup. Simmer over medium heat 45 minutes to thicken.
Lightly grease 13X9 baking dish and line with corn tortillas (don’t be stingy here, make sure the entire bottom is covered with tortillas. I usually even cut some in 1/2 or in fourths to cover all the cracks and the sides of the dish). Pour 1/3 meat mixture over tortillas and sprinkle with 1/3 cheese. Repeat 2 times.
Top with 4 to 6 tortillas dipped in the leftover sauce (sometimes I dip them before I put the 3rd layer of cheese because there usually isn’t enough sauce left in my pan to coat the tortillas). Sprinkle with additional cheese.
Bake 30-40 minutes until bubbly. Serve with sour cream.
Roasted Asparagus Salad with Citrus Dressing

The title says it all and the pictures back it up!
- 2 pounds asparagus (about 2 bunches), trimmed
- 1 pint tiny cherry or pear tomatoes, red or mixed colors
- 1 tablespoon extra-virgin olive oil
- 3/4 teaspoon salt, divided
- Freshly ground pepper to taste
- 1 tablespoon fresh lemon juice
- 1 tablespoon fresh orange juice
- 1 tablespoon honey
- 1/2 teaspoon Dijon mustard
Preheat oven to 450 degrees. Place asparagus in a large bowl. Add tomatoes and oil and toss to coat. Spread in a heave roasting pan or rimmed baking sheet, spooning the tomatoes between and on top of the asparagus. Sprinkle with 1/2 teaspoon salt and add a generous grinding of pepper. Roast until the asparagus is crisp-tender and teh tomatoes are warmed and slightly crinkled, about 15 minutes. Set aside until ready to serve.
Whisk lemon juice, orange juice, honey, mustard and remaining 1/4 teaspoon salt in a medium bowl until blended. Drizzle dressing over asparagus before serving. Can be served warm or at room temperature.
*The dressing for this side dish is very subtle, so if you like a stronger flavor (like I do), then double the dressing recipe.
Mini Peanut Butter Crumb Cakes

Now that I don’t cook our main meals from a box anymore (I’m sure Dustin will give a hallelujah to that!), I’ve been trying to make more ‘homemade’ desserts as well (although slice & bake cookies are the easiest and one of the tastiest desserts I know of!). I found this recipe in my ‘Cooking for 2′ magazine and was really surprised at how well it turned out (who knew making a cake without a box could actually be easy??!!). Aside from the yumminess, I am also fond of the ‘mininess’ of this dessert, allowing me to have personalized servings (great for when you have company or when you want to take a freshly baked goodie to a new neighbor…and not worry about getting your dishes back).
- 1/3 cup creamy peanut butter (I use Jiffy Natural Peanut Butter)
- 2/3 cup packed brown sugar
- 3/4 cup all-purpose flour
- 3 tablespoons cold butter
- 1 egg
- 1/3 cup 2% milk
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/8 teaspoon baking soda (does 1/8 teaspoon of anything really make a difference?? I add it just in case, but i don’t think it does anything!)
- 1/3 cup semisweet chocolate chips
In a large bowl, cream peanut butter and brown sugar until crumbly; stir in flour. Cut in butter until mixture resembles course crumbs. Set aside 1/3 cup for topping.
In a small bowl, whisk the egg, milk and vanilla. Add baking powder and baking soda to the remaining peanut butter mixture; stir in milk mixture just until moistened.
Transfer to 4 6-0unce ramekins coated with cooking spray. Sprinkle with reserved topping and chocolate chips. Bake at 350 degrees for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from ramekins to a wire rack to cool completely. I usually just serve mine in the ramekins if I’m not taking the cakes somewhere.

Here’s the kicker – Nutritional information (sorry, had to do it…but you can still have a treat every now and again…you just wouldn’t want to make these every night!!): 1 serving/1 cake equals 522 calories, 25g fat (11g saturated fat), 77mg cholesterol, 293mg sodium, 68g carbohydrates (what??!!), 3g fiber, 11g protein.
Creamy Bacon Wrapped Green Beans

The title of this post may be a little deceiving. I added the word ‘creamy’ to the beginning of this recipe title because when Dustin and I ate these green beans, they were just that, creamy….in such a good way. The weird thing is, is that there isn’t a ‘creamy’ ingredient in the recipe. Not sure if it was the bacon fat (don’t say eeewww, you know you like it!) or the way the salad dressing caramelizes on the beans when baking, but whatever it is, we loved the creaminess and I’m sure you will too!
- 2 cans uncut whole green beans
- 1 small bottle of Catalina salad dressing
- 1 lb bacon
- Seasoned salt
Cut raw bacon strips in half. Roll 4 or 5 whole green beans in 1 half slice of bacon. Continue to roll beans until casserole dish is full (recipe should fill a 9X13 dish). Drizzle Catalina over bacon-wrapped beans (I didn’t use a whole small bottle). Sprinkle beans with seasoned salt. Bake for 30 minutes in 350 degree oven. DELICIOUS!
Wining & just a little bit of dining

Last weekend was filled with A LOT of wine and between drinking there was a bachelorette party in honor of my very best friend, Merick. Merick’s sister arranged for a weekend away near the town of Fredericksburg and Saturday was the highlight of the trip when the 9 party participants accompanied the bride to 3 different wineries, tasting all that we could along the way!
It was great being together one last time before Merick ties the knot and although I’d like to share more, I’ll leave you only with pictures because “what happens at the bachelorette party, stays at the bachelorette party”…and you’ll never be able to figure it out from these!
Merick – let the final countdown begin. Enjoy every second of it, don’t forget to breath, and lean on us – we’re here to help wherever we can! LOVE YOU!

Swing Batter Batter – You’re Out!

Dustin and I made the trek to Granbury in September to see my family, catch a Rangers game and to attend my cousin Joey’s wedding. We had a blast and really enjoyed all of the activities – although time there always moves way to fast.
